5 Vegetable "Cheesy" Blended Soup
2 tbsp olive oil
1 large onion, chopped
2 large cloves of garlic, minced
3 stalks celery, chopped
2 medium carrots, chopped
1 large broccoli head, chopped
1 sweet potato, diced
6 cups bone broth, vegetable broth (or broth of choice)
Salt and pepper to taste
1/4 tsp. cayenne pepper (optional)
1/4 cup shredded cheddar cheese (optional)
In a large pot, heat the oil over medium heat. Add in the onions, garlic and cook until softened (4-5 mins).
Add in the celery, carrots, sweet potato, and broccoli. Continue to sautéed over medium heat for about 5 minutes.
Add the broth and stir. Bring to a low boil and let the veggies cook for 12-15 minutes until tender.
Carefully scoop the soup into a blender and with the blender lid ajar (slightly lifted so steam can escape) blend the mixture starting at a low speed and increasing until the soup is smooth. Add the pureed soup back into the pot and add additional 1/4 cheese and spice/salt to taste!
