Maple Banana Breakfast Muffins
Dry Ingredients
1/3 cup date flour
1 3/4 cup whole wheat flour
1 tsp. cinnamon
1 tsp. baking soda
1 tsp. salt
1/2 cup dark chocolate chips
Wet Ingredients
1/2 cup melted coconut oil
1/2 cup maple syrup
2 eggs
1 cup mashed banana (approx. 3 small)
1/4 cup almond or cashew milk
2 tsp. vanilla
Mix together the dry and wet ingredients separately (leaving out the chocolate chips). Once combined add the wet mixture into the dry and combine. Fold in the chocolate chips. Pour into a muffin tin and bake for 20 minutes at 350.
